The casing snaps, the inside stays juicy, and nothing about it tastes rushed.

Grill them and tuck them into a roll with the Sweet Italian Frying Peppers when they're in season. Slice and brown them for a baked ziti. Simmer them whole in a pot of red sauce and let the afternoon do the work.
