"Diana" radishes have a deep purple shoulder fading to white at the tip, and when you slice one open, the inside shows purple-to-pink marbling that most people don't expect. Beautiful on a cutting board and on a plate.
The flavor is mild and peppery, not aggressive. Diana is bred to stay crisp and crack-resistant, which means you get a clean snap and a consistent bite all the way through the bunch. I pull these at the right moment before the heat builds or the texture goes soft.
