Pueblo Chili Hard Goat Cheese — 8 oz Half Wheel (Yoder Family Farms)

Price: $16.97
Price: $16.97

$16.97· 8 oz half wheel · From Yoder Family Farms, Trinidad CO

Hard goat cheese with Pueblo chili, made from raw milk. Pueblo chili is a Colorado original, grown in the Arkansas River Valley, with a flavor that's earthy and warm rather than just hot. In a hard cheese it concentrates as it firms up.

This is one of Yoder's best sellers, and it earns it. The chili and the goat milk are both strong flavors that happen to work together.

Good for: a cheese board with bold red wine, slicing onto a burger or sandwich, shaving over roasted vegetables, pairing with smoked meats, anyone who wants Colorado on a cheese board.

Keep refrigerated, wrapped tightly. Raw milk cheese.

ABOUT YODER FAMILY FARMS
Yoder Family Farms is in Trinidad, Colorado, about two hours south of here. They raise their own dairy goats and grow the feed for their animals on the same land. The recipe they use is Italian, inherited from Philpott Goat Dairy, where it was refined over 36 years. Yoder is one of two farms in Colorado grandfathered to sell fresh cheese made from raw goat milk. That's not a marketing claim. It's a legal status that almost no one else can make.
