Pueblo Chevre — Fresh Goat Cheese Log (Yoder Family Farms)

Price: $5.97
Price: $5.97

$5.97 · 4 oz log · From Yoder Family Farms, Trinidad CO

Fresh goat chevre with Pueblo chili. Colorado chile has a distinct earthy heat that's different from any other pepper, and it comes through clearly here. This is Yoder's most Colorado cheese, and one of their top sellers.

The heat is real but not aggressive. It sits behind the tang of the goat milk and builds slowly, which is what good chile heat does.

Good for: crumbling over eggs and breakfast hash, spreading on a burger, a cheese board with bold flavors, pairing with roasted corn or peppers, anyone who wants a little fire in their cheese.

Keep refrigerated. Best within two weeks. Raw milk cheese.

ABOUT YODER FAMILY FARMS
Yoder Family Farms is in Trinidad, Colorado, about two hours south of here. They raise their own dairy goats and grow the feed for their animals on the same land. The recipe they use is Italian, inherited from Philpott Goat Dairy, where it was refined over 36 years. Yoder is one of two farms in Colorado grandfathered to sell fresh cheese made from raw goat milk. That's not a marketing claim. It's a legal status that almost no one else can make.
