Original Hard Goat Cheese — 8 oz Half Wheel (Yoder Family Farms)
$16.97· 8 oz half wheel · From Yoder Family Farms, Trinidad CO
Hard goat cheese made from raw milk using an Italian recipe that Philpott Goat Dairy refined over 36 years. Yoder inherited that recipe and the same approach: raw milk, simple ingredients, no shortcuts.
Raw milk carries flavor compounds that pasteurization destroys. In a hard cheese that ages into itself, that difference is significant. This is firmer than chevre, sliceable, and sharp in a way the soft versions aren't.
Good for: a cheese board with charcuterie, shaving over pasta or salads, slicing onto a cracker, cooking into a gratin or baked dish, eating straight.
Keep refrigerated, wrapped tightly. Slices cleanly when cold. Raw milk cheese.
ABOUT YODER FAMILY FARMS
Yoder Family Farms is in Trinidad, Colorado, about two hours south of here. They raise their own dairy goats and grow the feed for their animals on the same land. The recipe they use is Italian, inherited from Philpott Goat Dairy, where it was refined over 36 years. Yoder is one of two farms in Colorado grandfathered to sell fresh cheese made from raw goat milk. That's not a marketing claim. It's a legal status that almost no one else can make.
