Fresh chevre made from raw goat milk, shaped into a 4 oz log. Mild, clean, and tangy the way good goat cheese is supposed to taste. Four ingredients: cultured goat milk, rennet, salt, and nothing else.
This is the one to start with if you haven't tried Yoder's cheese. It's the baseline that shows you what raw milk does to flavor that pasteurized can't replicate.
Good for: spreading on crusty bread, crumbling over salads and roasted beets, a cheese board with honey and walnuts, stuffing into peppers, pairing with Palisade peaches in season.

ABOUT YODER FAMILY FARMS
Yoder Family Farms is in Trinidad, Colorado, about two hours south of here. They raise their own dairy goats and grow the feed for their animals on the same land. The recipe they use is Italian, inherited from Philpott Goat Dairy, where it was refined over 36 years. Yoder is one of two farms in Colorado grandfathered to sell fresh cheese made from raw goat milk. That's not a marketing claim. It's a legal status that almost no one else can make.
