Golden Beets with Tops — Fresh Bunch (Certified Naturally Grown)
$5.00 · 5–7 beets per bunch, tops on · Cut this week
Golden beets with the greens still on, delivered fresh. Milder and sweeter than red beets with none of the staining, and a second vegetable in the same bunch. The greens are tender and delicate compared to red beet tops — closer to spinach than chard, and just as good in a pan.
These are the ones that convert people who think they don't like beets. Roasted golden beets are almost buttery. The color holds on the plate. The greens cook fast and taste clean. One bunch, two meals.
Good for: roasting and serving alongside the Yoder chevre, sautéing the greens with butter and a little lemon, slicing raw into salads, a composed plate that looks like a restaurant put it together, introducing beets to someone who's written them off.
Remove the greens when you get home and store separately from the roots. Golden beets don't bleed — your cutting board is safe. Both keep well in the fridge for the week.
