Corn tortillas made from fresh masa at Pochitos Tortilla Factory in north Denver. The Luna family has been making tortillas by hand since 1997, the same way they always have — from scratch, no preservatives, nothing added.
Fresh masa corn tortillas have an earthiness and a texture that the shelf-stable grocery store version can't come close to. They hold together on the grill, char beautifully in a dry pan, and taste like corn is supposed to taste when it hasn't been sitting in a bag for weeks. Choose from classic White corn or Blue corn — the blue variety brings a slightly nuttier, earthier flavor and a color that makes a taco plate look intentional.
Good for: street tacos with the Hub's carne or bison, enchiladas with the Hatch chiles and Yoder cheese, warming directly on a gas flame until spotted and fragrant, chips cut and fried for a batch of nachos, any dish where the tortilla is part of the flavor, not just the wrapper.
Keep refrigerated. Best within 5 to 7 days. Warm in a dry skillet or on a gas burner — corn tortillas need heat to come alive. Stack and wrap in a clean towel to keep warm while you cook.
