Dark, sweet Bing cherries from C&R Farms in Palisade, on Colorado’s Western Slope. Deep red, firm, and bursting with the classic cherry flavor that only shows up for a few weeks a year.

Palisade’s high-desert days and cool nights are what make Western Slope fruit famous. These are picked at the short peak and trucked across the state, not the country.

Good for: snacking by the bowl, baking into pies and crisps, tossing into salads, freezing for smoothies.

Cherry season is short. Keep them cold and unwashed until you’re ready to eat, then rinse. Best within several days.
