Hearth Blend No. 6 starts with fresh milled Colorado Yecora Rojo wheat, toasted bran, and wheat germ. Naturally leavened and slowly fermented. The process is longer than most bakers are willing to do, and the loaf shows it.

The crust is crisp. The crumb is open and creamy. The aroma when you cut into it is roasted wheat, not a generic bread smell. Coy mills the grain fresh, which means the oils are still alive in the flour when it goes into the dough. That's what makes the flavor nutty and deep instead of flat.

Good for: eating warm with good butter and nothing else, alongside a bowl of soup, a sandwich that deserves better bread, a cheese board with the Yoder goat cheese, toasting thick and finishing with honey from Boone's Bee Farm.

Baked to order. Best within two days at room temperature, or slice and freeze what you won't finish. Do not refrigerate — it dries the crumb.
