White Scallions (Fresh Bunch, 10–12 stalks)

A full bunch of fresh white scallions, mild and clean. Ten to twelve stalks, cut fresh so the tops stand up instead of wilting.

Grocery store scallions are usually a few days old by the time they reach the bin. These are cut the same week you get them, and you can tell by the snap.

Good for: salads and stir-fries, soups, garnishes, folding into eggs or potatoes, anywhere a recipe says green onion.

Wrap in a damp paper towel in the fridge, and they’ll keep all week.
