Young kale picked before it gets tough. Tender enough to eat raw, sweet enough to convert a skeptic.

I grow this one because mature kale is a project; you have to massage it, dress it twice, talk yourself into it. Baby kale is just a salad. The leaves are small, the stems are soft, and the flavor is closer to spinach than to the giant blue-green leaves at the store.

A 1/3 lb bag covers two big dinner salads, or a week of green smoothies.

I cut these on Friday. Dry leaves in the fridge will hold their crispness through the next week.
