Scallions with deep purple stalks and a clean, mild onion bite. The color holds up raw and adds something to a plate that a plain green onion can’t.

I cut these fresh, so the tops are firm, not slimy. Use the whole stalk, white and purple alike.

Good for: garnishing tacos and soups, stir-fries, folding into eggs, a dinner-party plate, anywhere a recipe says green onion.

Wrap in a damp paper towel in the fridge. They’ll stay crisp through the week.
