This isn't a one-note salad green. Mesclun is a blend of lettuce, mustard greens, baby kale, and arugula, which means you get sweet, mild, and a little bite all in the same forkful. The color range alone tells you it's alive: greens, reds, and deep burgundies depending on what's at peak that week.

I chose this mix for the same reason I eat it at my own table. Variety in a bowl without buying five different bags.

A 1/3 lb bag builds two to three large salads, or fills out a grain bowl for four. The mustard greens add enough structure that it holds up to a warm vinaigrette without wilting into nothing.

Cut earlier this week. Keep the bag dry and closed, and it will stay crisp five to seven days in the fridge.
