Hakurei Salad Turnips (Sweet, Mild)

Small white salad turnips are sweet and mild enough to eat raw like an apple. Nothing like the bitter, woody storage turnips you’re picturing.

I grow these young so the flavour stays delicate. Raw, they’re crisp and faintly sweet. Roasted, they caramelise fast and turn buttery.

Good for: sliced raw into salads, roasting until caramelized, a quick sauté with butter, pickling, and eating raw with salt.

Store the roots in the fridge. Remove the greens (they’re edible too, good sautéed) so the turnips stay firm.
