Same heirloom and open-pollinated varieties as the slicer tomatoes. Same fields, same soil, same week. Just uglier. Cracked shoulders, deep ribs, irregular shapes, the kind of tomato a grocery store would never put on a shelf and a cook should never pass up.

A tomato cracks because it ripened fast after rain. It ribs because it's an heirloom variety that never got bred into a uniform sphere. None of that changes what happens when you slice into it. The flavor is identical to the pretty ones. The price isn't.

Good for: cooking down into sauce where shape doesn't matter, a tomato sandwich where you're slicing it anyway, chopping into salsa or bruschetta, caprese where the color variation looks intentional, any recipe where the tomato gets cut up and nobody sees what it looked like whole.

Store on the counter. Eat within a few days — these are ripe and ready, not built to wait. Some cracking is cosmetic. If a spot has gone soft, cut around it. Everything else is good.
