Young, it's firm with a bright tang. Given time in your fridge, it softens into a gooey, buttery, nutty center. This one is made to evolve, so eat it early or let it ripen and catch it where you like it.
Good for: baking whole until it oozes, tucking into puff pastry, a cheese board, pairing with the Palisade fruit in season.
Let it sit out 20 to 30 minutes before serving. Soft-ripened cheese tastes like itself at room temperature, not cold.
About MouCO
MouCO is a Colorado cheesery on the Northern Front Range. Their milk comes from a local dairy eleven miles away, picked up raw a few times a week, never trucked across the country. They make cheese the slow way, live cultures, natural rennet, hand-salted, ripened for weeks until the flavor is fully there. It's the same reason I grow the way I do.
