An ash-coated, soft-ripened cheese with a dark, dramatic rind and a creamy center. Starts tart and firm, then ripens into something buttery and rich with a mellow, earthy sweetness.

The showpiece of a cheese board, the one your guests ask about. Complex enough to be interesting, approachable enough that everyone actually eats it.

Good for: a cheese board centerpiece, paired with wine and fruit, spread on good bread, the Palisade peaches in season.

Let it sit out 20 to 30 minutes before serving. Like the Camembert, it's made to ripen, so taste it over a few days and catch it where you like it.

About MouCO

MouCO is a Colorado cheesery on the Northern Front Range. Their milk comes from a local dairy eleven miles away, picked up raw a few times a week, never trucked across the country. They make cheese the slow way, live cultures, natural rennet, hand-salted, ripened for weeks until the flavor is fully there. It's the same reason I grow the way I do. Short distance, real process, no shortcuts.
