I chose this baker because the bread starts with the grain. Most sourdough at the grocery store is sourdough in name only, commercial flour, fast rise, and a starter culture added for flavor without the time. CastleDough's flagship loaf is slow-fermented with Colorado-grown wheat. You can taste the difference in the first bite.
An 850g loaf is enough for a week of breakfast toast for two, or a family dinner with leftovers for sandwiches the next day.
Sourdough has no preservatives, so it's best in the first three to four days. After that, slice it and freeze what you won't use. It toasts straight from frozen.
