A mix of heirloom and open-pollinated slicing tomatoes from my fields. Different sizes, different shapes, different shades of red, orange, and green shoulder. No two pounds look exactly the same, because these are grown for flavor, not uniformity.
Grocery store tomatoes are one variety, bred to stack and ship. These are the varieties that couldn't survive that system, which is exactly why they taste the way they do. Sweet, acidic, complex. The kind of tomato that makes a sandwich worth eating over a sink.
Good for: a tomato sandwich with good bread, mayo, and salt, caprese with fresh mozzarella and basil, thick slices on a burger, chopping into a summer salsa, any plate where the tomato is the main event.
Store on the counter, never the fridge. Cold ruins what a vine-ripened tomato earned on the plant.
