Einkorn is a different grain from the wheat in grocery store flour. It carries a different kind of gluten that many people find easier to digest, though it isn't gluten-free. The flavor is nuttier and richer than all-purpose, and it bakes into bread, pancakes, and pasta with a warmth you don't get from a bag off the shelf.
Good for: sourdough and quick breads, pancakes and waffles, fresh pasta, anywhere you'd use whole-grain flour.
